Finish a full New Game+ playthrough — the platinum's biggest time sink. Your gear, levels and Blade Arts carry over, so NG+ is much faster (~10 hours) than the first run.
Tip
NG+ scales up to roughly Normal difficulty if you played the first run on Easy — comfortable, not brutal. Use NG+ to grab the one blade you save for last and to top your Keeper Golem count to 30.

Defeat Rangifer, a giant deer/plant Nushi. First fought at the lake beneath the Cliff-Facing Tower in Chapter 1 (and again, stronger, later). Story-mandatory, so it can't be missed. Its elemental weakness is Flame — coat your weapon/arrows accordingly for far more damage. Fighting at close range is safer — it cuts off its ranged attacks; stay under it and punish between swings.
Tip
If it walls you, farm a few levels, exploit the Flame weakness, and lean on Koo's arts and Entanglement Overdrive to burst it down.

Defeat Lacerta, a multi-phase Nushi. Fought in the Reservoir arena in Chapter 2. Story-mandatory, so it can't be missed. Its elemental weakness is Lightning — coat your weapon/arrows accordingly for far more damage. Switch to ranged weapons while it's airborne, and counterattack after its longer attack sequences end.
Tip
If it walls you, farm a few levels, exploit the Lightning weakness, and lean on Koo's arts and Entanglement Overdrive to burst it down.

Defeat Ursa, a two-phase bear Nushi that fully restores its health mid-fight. Fought at Starfall Tower in Chapter 10. Story-mandatory, so it can't be missed. Its elemental weakness is Acid — coat your weapon/arrows accordingly for far more damage. Play hit-and-run rather than staying aggressive — dip in for a couple of hits, then reset before its big swings.
Tip
If it walls you, farm a few levels, exploit the Acid weakness, and lean on Koo's arts and Entanglement Overdrive to burst it down.

Defeat Corvus, a bird-type Nushi that spends much of the fight airborne. Fought at the Giant Tree in Chapter 7. Story-mandatory, so it can't be missed. Its elemental weakness is Lightning — coat your weapon/arrows accordingly for far more damage. Swap to ranged weapons whenever Corvus takes flight; punish on its landings.

If it walls you, farm a few levels, exploit the Lightning weakness, and lean on Koo's arts and Entanglement Overdrive to burst it down.

Defeat Taurus, a very mobile Nushi. Fought in the Pilgrim's Zone in Chapter 4. Story-mandatory, so it can't be missed. Its elemental weakness is Acid — coat your weapon/arrows accordingly for far more damage. Many of its attacks are unblockable, so dodge rather than parry; stay patient and don't overcommit.

If it walls you, farm a few levels, exploit the Acid weakness, and lean on Koo's arts and Entanglement Overdrive to burst it down.

Defeat Koo's Nushi form. A late-game story boss — the emotional fight against your own corrupted companion, Koo, transformed into a Nushi. Story-mandatory and unmissable. Read its attacks patiently, dodge its lunges and punish between combos.
Tip
Bring your strongest build and plenty of healing; treat it like the game's other Nushi — find the safe punish window after each combo.

Defeat the dual boss Shidou and Nue. First fought in Chapter 3. Story-mandatory, so it can't be missed. Its elemental weakness is Poison — coat your weapon/arrows accordingly for far more damage. Never stand between the two — reposition so they line up, and focus whichever one is actively attacking.

Focus all your damage on a single target to drop it fast, rather than splitting attacks across both.
